One of the beauties of having adult kids is that sometimes they want a recipe from me. This tells me that no matter how they use to complain when they were kids, they actually liked some of the dinners i made. Last week Casey asked for my Porcupine Meatball recipe. It is an easy dinner and everyone at our house likes it. So i typed it up and emailed it to him. Today he texted and asked if i could re-send it because he couldn't find it in his email. So i went to get it and it was gone. Not in my recipe file. Lost. (evidently i didn't refile it properly).
I just made me sick to think i had lost this recipe. I texted Casey back and told him he needed to search his email again, and if he found it, to send it back to me. And...tada! he found it. Whew. So i am posting it here, not for you so much as for me, so i can find it next time i am in the mood for porcupine.
Porcupine Meat Balls
1 pound ground beef
1/3 cup canned milk
2/3 can applesauce (about 10 oz)
2/3 cup minute rice
1/2 cup chopped onion
1 1/2 tsp. salt
1/4 tsp. pepper (i use more)
2/3 cup catsup
2/3 cup water
Mix first 7 ingredients.Shape into 2-inch balls. Mix catsup and water; pour over meatballs. Bake at 350 for one hour.
